Microbiological Quality of the Clam (Tivela mactroides) and Extraction Waters in Bay Guide, Sucre State, Venezuela

The microbiological profile of the Triangular tivela clam, Tivela mactroides and the sea water from the extraction zone in the natural bank of Playa Guiria, Sucre State, Venezuela were evaluated. For this, a total of 12 samplings were made between November 2007 and December 2008 in four stations of the beach. The samples of the Triangular tivela clam were evaluated for recounts of aerial mesophylls (AM), Number More Probable (NMP)/g of fecal coliforms (CF) and Escherichia coli (Ec), and the detection of Salmonella spp.; whereas in the sea water samples the determinations were the NMP/100 mL of total coliforms (CT) and CF. The recounts of AM in the Triangular tivela clam satisfied the microbiological criteria for commercialization established by FDA-USA (until 5.0x10(5) UFC/g). In the other hand, the recounts of CF and Ec surpassed the value of 230 NMP/g (maximum limit allowed). Salmonella spp. was only detected during September 2007 in station III. The recounts of coliforms from the sea water samples analyzed were satisfactory. However, 10% of the samples from stations I, II and III, surpassed the standard of 14 NMP/100 mL of CF during december, april and august, which indicates that the zone is being contaminated during these months. The identified species were: E. coil, Klebsiella pneumoniae, K. oxytoca, Enterobacter cloacae, E. aerogenes, E. sakazakii, E. agglomerans, Citrobacter freundii, Proteus mirabilis, P. vulgaris and Serratia spp. This fact emphasizes the importance of a permanent control of the water quality and surveillance of the clams, to support the increase of extraction of this important fishery resource in the zones of extraction, which can then be properly classified and certified.
