摘要

For a very long time, the problem of food security has always been one of the most pertinent problems. With the development of national economy and the improvement of people living standards, food safety accidents occur frequently, especially in recent years such as the various Sudan red events, drainage-oil event, and clenbuterol events, etc., which not only seriously infringed the consumer life and health, but also caused the social concern and attention. In reaction to this phenomenon, the district government has successively introduced the corresponding regulations, and actively strengthened the food safety law. Although the effect is remarkable, the author thinks that purely relying on the government supervision is unable to solve the nature problem of the food safety. Therefore, countries should correctly deal with food safety issues in the form of diversification, and the food security liability insurance launched by insurance companies is the current hot topic. In this paper, from the perspective of option theory, it aims to explore and analyse the pricing of the food security liability insurance.
