With the influence of globalization on economy, society and culture, Chinese restaurants have been developed from catering to railroad workers in 19th century to all the customers in U.S. The purpose of the study was to figure out what are the main factors that influence customers' overall, impression on Chinese restaurants in U.S at the present time. A closed-ended questionnaire was used, and a systematic sampling approach was employed to survey a sample of customers in Stillwater, a city in Oklahoma State. 15 attributes were selected for customers to measure their impression of a Chinese restaurant. Data obtained was analyzed by multivariate methods: frequency, means, ANOVA, and factor analysis. The results of the study showed that "External factors," "Quality and value," "Waiting time" are three key factors that effect the overall impression of Chinese restaurants in U.S.
