The majority of tropical countries dedicated in the production of banana fruit have a lot of excess related with this cultivation. This work present an alternative to give add value to this excess using hydrothermal processing at non isothermal conditions with temperatures between (110 - 240) degrees C. It was analyzed the yield in solid, the liquid and solid composition. The solid phase is composed mainly by glucan and lignin; in soft conditions exists higher proportion of glucan with a maximum of 67.6 g glucan/g and the lignin proportion is increased at the same time that severity of the treatment is increased, the final value was 89.5 g lignin/g. In relation to liquid phase, it is possible to obtain solutions with high glucose and gluco-oligomers (71 - 81 g/L) using temperatures between 110 and 200 degrees C. The concentration of other sugars and oligomers was too low. Others compounds were detected specially hydroxymethylfurfural, formic acid, levulinic acid and furfural. The factibility analysis to bio-ethanol production by fermentation path using the samples treated by hydrothermal process allows obtaining ethanol concentrations of 30 - 40 g ethanol/L
