The methanolic extract of Dracocephalumkotschyi leaves and its fractions were screened using liquid chromatography tandem mass spectrometry (LC MS/MS) to identify phenolic compounds. The total phenolic content, antioxidant activity of the crude extract and fractions were evaluated in model systems and soybean oil during accelerated storage at 60 degrees C for 20 days. A total of 37 polyphenolic compounds were found in all fractions including the non-anthocyanin, anthocyanin, neutral and acidic fractions. The total phenolic content of the crude extract was highest, followed by the non-anthocyanin fraction (104.6 mg GAE/g). In terms of the ferric reducing power, the non-anthocyanin fraction had the highest amount of antioxidant activity, whereas the neutral polyphenolics fraction showed the highest amount of antioxidant activity according to total antioxidant capacity. Furthermore, the neutral polyphenolics fraction showed a higher antioxidant activity than the other fractions in soybean oil, which might be related to the flavonoid compounds present in this fraction.
