Aquatic products processing industry in China: Challenges and outlook

摘要

The aquatic products processing industry is becoming one of three pillar industries in China's fish culture industry (the other being fishing and aquaculture) and has been paid more attention. An integrated system, which involves many kinds of aquatic products processing, has been established in the current industry. More and more companies have introduced advanced equipment and standardized management to improve the technology of processing and product quality. However, there are some problems in the development of the aquatic processing industry, such as lack of scientific industrial standards, smaller proportion of refined processed aquatic products, low level of techniques in offal processing, security problems and weak industrial organization. In the present manuscript, these problems of the Chinese aquatic processing industry will be expounded in detail. Furthermore, the challenges and outlook will also be discussed.
