Technology of ultrahigh-pressure extraction (UHPE) for rutin from mulberry leaf was developed at normal temperature. The effects of different extraction solvents, extraction pressures, solvent to material ratios, extraction time and sample particle size on the extraction of mulberry leaf rutin using UHPE were investigated. It was found that the effect of extraction pressure on the yield of rutin was most significant, and the solvent to material ratio was the worst. The optimum extraction conditions were obtained as follows: extraction solvent was ethanol of 70% (V/V), extraction pressure was 500 MPa, solvent/material (m/V) ratio was 20:1 (m/V), extraction time is 8 min, particle size was 0.18 - 0.25 mm, and the yield of mulberry leaf rutin was 23.9 mg/g.
