Melanin-producing strains of Pseudomonas fluorescens were isolated from adipose tissue of refrigerated spoiled pork and beef displaying spots with black discolourations. Such strains have not been described in the literature before. Pure cultures of the isolates were able to produce black discolourations on deliberately inoculated pork-back fat and white emulsion-type sausage (Gelbwurst). Black discolouration of pork and beef adipose tissue is a relatively rare but quite eye-catching phenomenon and an obvious sign of advanced spoilage of the affected meat surfaces. The circumstances of isolation of the responsible bacteria point to a spoilage association or biofilm in which the yeasts possibly promote bacterial growth.
