摘要

In this study, the development of a fast electrochemical method for the characterization of wines through the evaluation of their phenolic compounds content was reported. Cyclic voltammetry experiments were carried out on wines using graphite-based screen-printed electrodes as transducers. Voltammograms were elaborated with software by obtaining resolved oxidation peaks that can be attributed to different groups of phenolic compounds. Results were presented as diagrams of peaks heights plotted vs. their oxidation potential, giving a "spectral distribution'' of the phenolic content, which characterize each wine. The method was applied to the characterization of different samples of red and white wines.
