摘要

Physical properties of osmotically dehydrated as well as convectively dried apples have been investigated using various pressures (78.4, 49.0 and 19.6 kPa), osmotic treatment times (12, 96 and 180 min), and various convective drying temperatures (55, 70 and 85 degrees C). The effects of some parameters on mass transport during osmotic dehydration, drying kinetics along with qualitative traits: dry matter content, water activity, volume, density, reconstitution and mechanical properties, changing of structure of osmotically dehydrated tissue and of convective dried apples were investigated.
