H-1-NMR spectroscopy coupled with Principal Component Analysis (PCA) as chemometrical method was used to authenticate Romanian vegetable oils (sunflower, soybean, linseed and rapeseed) according to their variety. H-1-NMR spectroscopy offers two possibilities for vegetable oils authentication. The first one, based on H-1-NMR integrals and systems of chemometric equations allowed to determine the composition of vegetable oil on four classes of fatty acids, which was further used as input for the PCA analysis in order to separate the oils according to their variety. The second possibility in terms of authentication is to transform the H-1-NMR spectra into series of numerical values (vectors) by integrating certain peaks or spectral windows. This strategy, investigated in the present paper, showed good results in discriminating among sunflower, soybean, rapeseed and linseed oils.
