MASS TRANSFER KINETICS DURING ARENCA (Triportheus magdalenae) SALTING

The process of preservation by salting is an ancient technique that has great potential for success in Colombia, especially in regions where communication is difficult and cooling system is unfeasible for its high cost. The aim of this work was to study the kinetics of mass transfer during salting by immersing the arenca (Triportheus magdalenae) after determination of mass transfer coefficients (Kc) and diffusivity (D-0), in order to improve artisanal methodology for salting the species in Cartagena. Data for moislure and NaCl content in arenca slices of 2x2x2cm, depending on the time spent in salting solutions 10, 15 and 20% w/v NaCl were obtained. These data were used in a mathematical model for determining mass transfer coefficients and diffusivity. An equation of concentration vs time and position for an infinite slab of 2L thickness was used. The moisture content was inversely proportional to the NaCl content, and D-a and Kc parameters increase with NaCl concentration in the solution.
