BACKGROUND: Lactobacilli as normal flora of gastrointestinal tract have beneficial effects on human health through maintaining microbial equilibrium of gut. The aim of this study is isolation and detection of Lactobacillus spp. from commercial yoghurt and evaluation of their abilities to decrease effects some of mutagenic and carcinogenic material.
METHODS: Lactobacilli were isolated from commercial yoghurt samples by using MRS agar in anaerobic condition (5% CO2 and gas peak) and 37 degrees C temperature. Then, they were detected by using biochemical tests. Antimutagenic activity of Lactobacillus spp. isolated from commercial yoghurt, was investigated against sodium azide, acrylic amide, potassium permanganate and 2-nitrofluorene using Salmonella typhimurium strains TA100 in presence and absence of S9.
RESULTLTS: Lactobacillus acidophilus, Lactobacillus plantarum, Lactobacillus delbrueckii subsp. bulgaricus and casei species were identified in commercial yoghurt. Some Lactobacillus species can inhibit mutagen agents by 40%, which means they have a very good antimutagenic activity. Higher antimutagenic activities of lactobacilli supernatants were observed against acrylic amide.
CONCLUSIONS: This study results show that using dairy products containing lactobacilli can help human health significantly and they cause to decrease in absorption of mutagenic agents is body by changing gut flora.
